A week of vegan lunches

During the week of October 2, Food Services highlighted vegan lunch options on campus each day. These lunches included local tempeh and sweet potatoes, creative salads and a smoothie from Blended. Food Services aknowledges that students have restricted diets, and wanted to eat a week in vegan and dairy free students' shoes. The greatest takeaway is that sometimes to get exactly what you want, you many need to get creative. Follow Food Services on Instagram to see more projects like this one.

Sustainability

Food Services participates in Meatless Mondays, an international campaign that encourages people to go meatless one day a week. Meatless Mondays are beneficial for  your health and decreases the environmental impact of your food. Eating a plant based diet, even once a week, can decrease the water used in food production, reduce greenhouse gases produced in farming and reduce the fuel needed in farming. 

Inclusive Dining

Food Services is committed to providing an inclusive dining experience.

Last year we expanded our vegan options:

  • Added Tofu (V+) to salad bars

  • Added Gardein Burgers (V+) (GF) to Sanford Commons and Rivers Street Cafe

  • Added Tofu Scramble (V+) to breakfast at Rivers Street Cafe

  • Park Place added the Grab-and-Grains Bar featuring vegan and vegetarian grain bowls

  • Park Place added vegan waffle batter

  • Our Bake Shop makes a rotating flavors of Hummus (V+) which are sold at all venues

  • The Markets have added So Delicious® Dairy Free Coconutmilk Frozen Dessert, a vegan and dairy-free ice cream
